What You'll Need

To make fig & ricotta toast, you'll need the following ingredients:

  • 1 slice sourdough bread (you can sub for Brioche if sourdough isn't your jam)
  • 2-3 Mission Figs, quartered
  • Avocado oil, for toasting
  • 1 cup of ricotta cheese, whipped
  • 2 slices extra thick bacon (we prefer center cut)
  • Honey, for drizzling
  • Plastic sandwich bag or plastic wrap (for piping)

Instructions

First, we're going to make the whipped ricotta. This is what really makes this toast groovy. To do this, simply just get the 1 cup of ricotta, electric hand mixer, grab a bowl and whisk for 2-3 minutes until smooth, fluffy and creamy. Feel free to add some honey in this stage if you'd like.

Set aside and place into the fridge so it can firm just a tad and not lose structure due to the humidity in the environment.

  1. Turn oven onto BROIL and 500º F.
  2. First, we're going to make the whipped ricotta. This is what really makes this toast groovy and gives you the feeling of success.

  3. Cook your bacon in a frying pan, or use an air fryer then set aside.
  4. Grab a baking sheet. If you don't have a baking sheet, layer two sheets of aluminum foil onto the countertops to double up.
  5. Lay down your slices of sourdough onto the baking sheet or aluminum foil. Coat the sourdough with avocado oil until lightly saturated (but not too much).
  6. Place the baking sheet with the sourdough into the oven and broil for about 3 to 5 minutes, or lightly toasted/browned (make sure to check as some ovens may vary).
  7. While sourdough is in the oven, slice the figs in thin quarters to prepare for toast.
  8. Once sourdough is gently browned, remove from the oven and let cool for about 1-2 minutes.
  9. Remove the whipped ricotta from the refrigerator and spoon a hefty amount into a thin, plastic sandwich bag. Cut a small piece of the corner of the wrap to create a pipe.
**If you don't have a sandwich bag, get some saran/plastic wrap and roll enough out to cut for a large square. Scoop ricotta into the center of the wrap and fold plastic to cover the ricotta tightly. Cut a very small piece of corner to create pipe.

How to Assemble the Toast

  1. Layer your two pieces of bacon parallel on the bread (horizontally).
  2. Grab the makeshift pipe bag of ricotta and slowly pipe whipped ricotta parallel to the bacon in an "S" shaped until filled.
  3. Add sliced figs on top.
  4. Drizzle with honey in a zig-zag.
  5. Feel free to garnish with parsley or zest of lemon. Shazam. Party time in your mouth. We're groovin' and shakin'.
